Research in China is Curing

Type 1 Diabetes with Fat Cells

Scientists have achieved something previously thought impossible: reprogramming a person’s fat cells to produce insulin. This unprecedented procedure, performed in China, allowed a 25-year-old woman with type 1 diabetes (T1D) to become insulin-independent, marking an extraordinary step forward in diabetes research.

Cheesy Baked Zucchini Casserole (Diabetic-Friendly Recipe)

Tender zucchini slices baked in a cheesy, golden custard. Low-carb, kid-friendly, and easy to customize!
Quick Time GuidePrep: 10 mins Cook: 25–30 mins Total: ~40 mins
Ingredients
  • 2 medium zucchinis, thinly sliced
  • 1 cup shredded cheese (cheddar, mozzarella, Gruyere)
  • ½ cup grated Parmesan
  • 2 large eggs
  • ½ cup milk or cream
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper, to taste1
  • tbsp olive oil (for greasing)
  • Optional: breadcrumbs or almond flour topping
  • Optional herbs: parsley, thyme, oregano
Instructions
  • Preheat oven to 375°F (190°C).
  • Grease a baking dish with olive oil.
  • Salt zucchini slices, rest for 10 mins, blot dry to reduce moisture (optional but helps texture).
  • Whisk eggs, milk, garlic powder, onion powder, salt & pepper.
  • Layer zucchini in the dish, pour custard over, top with shredded cheese and Parmesan.
  • Bake uncovered 25–30 mins until golden, bubbly, and set.
  • Cool slightly, garnish with fresh herbs, and serve warm.
